6 Dining Room Protocols to Use in An Allergy Reaction
As part of every new hire training, the dining room staff should be well versed in the protocols to follow should an allergy incident occur.
- Inquire if any guest has a known food allergy
- Inform Dining Room Manager, and/or immediate supervisor
- Inform servers in surrounding sections of the dining room for them to spot any reactions
- Inquire with guest as to what of type of allergy or allergies and severity of any reactions
- Review menu items and alternatives with the guest
- Post on guest check table: number and seat position of guest with allergen to alert BOH
- Post on guest check type and severity of allergy and reaction
- Once guest check is in the kitchen, also inform the chef and review guest’s food order
- Once plate is ready to deliver, General Manager or server should deliver to the guest
- Perform multiple table checks to monitor guest, however, do not hover to make them feel uncomfortable
- Report any type of reaction to the Dining Room Manager, and/or immediate supervisor
- Call 911 if any reaction appears
- Dining Room Manager or server should stay with the guest until medical attention arrives, DO NOT offer medical advise to the guest
- Assist the guest or people in the guests’ party
- Document the incident in the MOD log book or daily log book
- Be ready to assist medical professionals with restaurant related questions:
- location address
- phone number
- MOD
- time of incident
- food and beverage the guest ordered, you may be asked total table order as well
- if an Epi – pen or other anti – histamine was used
- other questions may be incident specific
- Do not offer information or add any commentary, only respond with facts about the case.
