How to use Agar-agar: 

  1.  Whisk the agar into cold liquid.
  2. Heat the liquid until boiling.
  3. Boil for about 1 minute.
  4. Pour the mixture into the desired mold.

Products set with agar set very quickly and can be ready within an hour.

How to use Pectin:  

  1. Mix some granulated sugar with the powdered pectin to ensure it disperses well in your mixture without clumping.
  2. Add the pectin mixture to either hot or cold liquid, whisking thoroughly.
  3. Bring the liquid to a full boil, add additional sugar, and cook to dissolve.
  4. Pectin will set once all excess liquid is evaporated (usually a specific temperature is given to ensure this) and an acid is added (in the case of non-acidic liquids).

Products set with pectin take about 24 hours to reach their final set texture.
