What is leavening?

Why do we need to leaven our pastries?

What is leavening?

Leavening is the process of adding volume to baked goods through the addition of gasses.  These gasses are created during the mixing process as well as with the addition of specific ingredients called leaveners.  The mixing, addition of leaveners, and the eventual addition of heat all assist in creating volume in baked goods.

Why Leaven?

  • Leavening creates volume and structure for the baked good.
  • Leavening creates a tender baked good
  • Leavening makes baked goods easier to digest
